Each batch is finished with cold pressed bergamot oil, the citrus at the heart of Earl Grey.

A quick splash of hot water over the leaves, swirled and poured off. It wakes the leaf and washes away any dust.
One heaping teaspoon of whole leaf per cup, plus one for the pot.
Bring fresh water to a boil, then let it settle for thirty seconds, about 200°F (95°C), so it never scalds the leaf.
Four to five minutes: the Persian dam, until the brew runs deep red and aromatic.
Pour it clear, no milk. A sugar cube held on the tongue, a date, or a wedge of citrus alongside. Then, simply, stay.
